Hot Cocoa

There is a slight nip in the air and it seems the time has come for snuggling up in favorite sweaters, curling by the fireplace, and yes - hot cocoa!

I got a simple little recipe from Gale Gand's cook book and I really wanted to try it out. Very simple, only 4 ingredients (serves 4):

  • 4 cups whole milk (I used skim... 2% might be your best bet)

  • 1/4 cup unsweetened cocoa powder

  • 1/2 cup light brown sugar

  • 1/4 teaspoon vanilla extract

Heat milk to a simmer in a saucepan. Stir cocoa powder and brown sugar together. A few teaspoons at at time, add the hot milk to the cocoa mixture to make a smooth paste. This will smell AMAZING! Add the paste to the hot milk and simmer for 2 minutes but DO NOT let boil. Remove from heat and stir in the vanilla.

Top with whipped cream (of course). Chocolate shavings would be nice but I just used a bit of the cocoa powder on top.

This was easy and fun to make. It had a richer taste than regular hot cocoa mix.

What are your favorite chilly day treats?
